Pasta with tuna fish
If you like tuna fish you'll enjoy this easy to make pasta.
Serves: 4
Preparation time: 30 minutes
Recommended wine: Chardonnay

Ingredients:
- 1 lb. pasta shells
- 1 large white or yellow onion
- 2 6oz. cans of tuna fish
- 5 Tbsp. extra virgin olive oil
Instructions:
- Slice the onion thinly.
- Warm up a non stick skillet and add 3 Tbsp. oil.
- Add the onion to the skillet mix until well coated with
oil and then turn the heat down to medium low.
- Cook the onion until soft and if needed add a little
bit of water.
- Drain the oil from the tuna, add the tuna and 2 Tbsp.
oil left to the onions, mix until well combined.
- Cook the tuna and onions for another 5 minutes.
- In the mean time cook the pasta as directed. Once ready
add the pasta to the tuna and onions mix and serve immediately.

Pasta salad with chickpeas
Serves: 4 to 6
Preparation time: 30 minutes

Ingredients:
- 1 lb. pasta shells
- 1-1/3 cups chickpeas (garbanzo beans)
- 3-1/2 oz. bacon, better if it's one thick slice
- 1 cup red bell pepper cut in small pieces
- 1/3 cup sliced black olives
- 3 Tbsp. chopped pickles (without dill)
- 3 Tbsp. fresh chopped Italian parsley
- 2 Tbsp. capers
- 1 clove garlic
- 3 Tbsp. fresh squeezed lemon juice
- 1/2 cup extra virgin olive oil
- pepper
- salt to taste
Instructions:
- Prepare the pasta as directed.
- Meanwhile cut the bacon into small pieces, fry it and
then drain off the excess grease.
- In a large bowl put the chickpeas, bacon, pickles, olives,
parsley and capers.
- In a small bowl beat the lemon juice with the oil, a
pinch of salt and pepper.
- When the pasta is ready rinse it with cold water and
then drain it well.
- Add the pasta to the bowl and mix.
- Press down on the garlic clove to open it a bit, but
not so much that it breaks into pieces. Put a toothpick
through it and add it to the pasta.
- Now add the oil mixture and combine it all well.
- Leave it the refrigerator for an hour or so. You can
prepare it one day ahead.
- Remove the garlic before serving.

These are easy to make and quick to serve...i am thankful that i can prepare delicious recipes in no time now.
