Baked Halibut Supreme
Ingredients:
- 3 lbs fresh or frozen Halibut
- Butter
- Salt
- Pepper
- 1/2 cup Parmesan Cheese
- 4 strips of Bacon
- 1 tsp Lemon Juice
- 1 cup Sour Cream
- 1/3 cup buttered Bread Crumbs
- chopped Parsley
Directions
Rub halibut with butter, salt and pepper. Lay bacon on bottom
of baking pan and place fillets of top. Make a mixture of
sour cream, cheese, crumbs and lemon juice. Spread over the
fish. Bake halibut at 350F until tender (20 to 30 minutes).
Serve sprinkled with grated cheese and parsley. Servings:
6 to 8.
Halibut Tacos
Ingredients:
- 8 oz Halibut Fillets
- 1/2 cup non-fat Milk
- 3/4 cup seasoned Bread Crumbs
- 8 Corn Tortillas
- 1 sliced Tomato
- non-stick Vegetable Spray
Directions:
Pour milk into one shallow pan and bread crumbs into another.
Gently coat fish by dipping first into milk, then into crumbs.
Be sure that the fish is completely coated. Place fillets
on a baking sheet that has been coated with nonstick spray
and bake in a preheated 350 F oven for 10 minutes or until
fish is done. Warm the corn tortillas in the oven and place
the fillets, cabbage and tomato slices on top. Serve tacos
with tartar sauce or salsa and fresh cilantro, if desired.
Makes 8 tacos.
