20 Minute Chicken Parmesan Recipe
Ingredients:
- 4 skinned and boned chicken breast halves
- 1 large egg, lightly beaten
- 1/2 cup Italian-seasoned breadcrumbs
- 2 tablespoons butter or margarine, melted
- 1 3/4 cup spaghetti sauce
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Directions:
Place chicken between two sheets of heavy-duty plastic wrap;
flatten to 1/4-inch thickness, using a meat mallet or rolling
pin. Dip chicken in egg, and dredge in breadcrumbs.Cook chicken
in butter in a large skillet over medium-high heat until browned
on both sides. Spoon spaghetti sauce over chicken; bring to
a boil. Cover, reduce heat, and simmer 10 minutes. Sprinkle
with cheeses and parsley; cover and simmer 5 additional minutes
or until cheeses melt. This recipe for 20 Minute Chicken Parmesan
serves/makes 4.
Baked Chicken Parmesan Recipe
Ingredients:
- 5 tablespoons Unsalted Butter -- melted
- 1 tablespoon Dijon Mustard
- 3/4 cup Dried Bread Crumbs
- 1/2 cup Parmesan Cheese
- 2 tablespoons Parsley, Fresh -- chopped
- 1 teaspoon Dried Basil
- 8 Whole Chicken Thighs Without Skin
Directions:
Preheat the oven to 400F. Lightly grease a 9" x 15"
baking dish. In a shallow bowl, combine the butter with the
mustard. In another shallow bowl, blend together the bread
crumbs, cheese, parsley, and basil. Dip the chicken pieces
first into the mustard mixture, and then coat with the bread
crumb mixture. Place skin side up in the baking dish. Bake,
uncovered for 45 minutes. This recipe for Baked Chicken Parmesan
serves/makes 4.
