Beths-brownies recipe

Beth's lowfat Brownies:
- 2 cups flour (I use whole wheat mixed with unbleached
white)
- 1/3 cup carob powder
- 2 tsp baking powder
- 1/3 cup honey
- 1/2 cup unsweetened applesauce
- 1 cup fruit juice
- 1 tsp vanilla
Mix dry ingredients. Mix wet ingredients. Add dry to wet.
Mix well and bake for 35 minutes at 350 degrees. Easy!
Icing:
- 8-10oz tofu (medium consistency)
- 2 tablespoons brandy or 3/4 tsp imitation brandy flavor
- 4-5 tablespoons carob powder
- 1/4 cup honey
Put all this stuff in a food processor or blender and blend
until smooth. It usually takes 5 minutes for the tofu to get
really blended in. When brownies are somewhat cool spread this
on top, but don't wait too long after you make the icing cause
it thickens up some. kwhoney honey
Saucepan Brownies
Mix in one bowl:
- 1/2 c. flour
- 1/3 c. cocoa
- 1/4 t. baking powder
- 1/4 t. salt
In separate bowl mix:
- 1/2 c. pureed prunes (a 4 oz jar of baby food prunes
is perfect)
- 2/3 c. sugar
- 1 t. vanilla
- 2 egg equivalents.
Add dry to wet. Put in 8 inch square pan. Bake at 350F for
20-25 minutes or un til edges look dry and start to pull away
from the pan. kwovo ovo.

These are easy to make and quick to serve...i am thankful that i can prepare delicious recipes in no time now.
